Smokey, herbal, Dark... The Sage on the Stage harks back to an older pedagogy in teaching, but sometimes its nice just to sit back and listen, or at least sit back and drink. As always play with the ratios to match your personal taste when it comes to heat, sour and sweet.
2 oz mezcal
1.5 oz fresh lime juice
1 oz blackberry-sage simple syrup
2 dashes of orange bitters
Burnt sage leaf for garnish
Place all ingredients in a cocktail shaker with ice. Shake, and strain into a rocks glass with fresh ice (ideally withone large, clear block of ice). Garnish with partially burnt & smoldering sage leaf.
2 pt sesame fat washed Japanese whiskey
1 pt fresh ginger syrup
3/4 pt fresh lime juice
dash of absynth
