Ingredients

2 oz Tequila or Mezcal

2 oz lime juice

1 oz cilantro-mint simple syrup

2-4 muddled strawberries

Pinch salt or dash of saline solution

oz 1x

60 ml Tequila or Mezcal

60 ml lime juice

30 ml cilantro-mint simple syrup

2-4 muddled strawberries

Pinch salt or dash of saline solution

ml 1x

250 ml Tequila or Mezcal

250 ml lime juice

175 ml cilantro-mint simple syrup

½ qt strawberries blended & strained

Pinch salt or dash of saline solution

ml batch

Directions

For Single Servings:

Add strawberries and lime into a shaker. Muddle the strawberries, then add the other ingredients and ice. Shake vigorously. Double strain into a coupe glass or low ball glass with ice. (Note: When double straining, use a large mesh strainer as the strawberry puree will clog a finer strainer. Alternatively, you can skip the extra strain if you are okay with some muddled strawberry making it into the final drink).

For Batch Cocktails:

Add strawberries to a blender with lime juice. Blend lightly, and strain through a colander to remove large pieces. Then strain through a medium strainer to remove smaller strawberry puree. You may want to strain again, but keep in mind that fine mesh straining strawberry puree can take time. Once your lime/strawberry juice mixture has been strained to the desired clarity, add it to a measuring pitcher with tequila and/or mezcal (you can do half and half for added complexity), simple syrup, and salt. Mix and pour into a clean bottle. When serving, add the mixture to a cocktail shaker with ice, shake vigorously, and strain into coupe glasses to serve.
